Serves 4
Ingredients:
- ½ yellow onion, chopped
- ½ teaspoon sugar
- 2 cloves garlic, finely chopped
- 2 cups frozen green peas
- 1½ cup vegetable stock
- A few mint leaves
- 1¼ cucumber, diced (reserve some for garnish)
- 2 tablespoons olive oil
- 1 tablespoon fresh lemon juice
- 4 tablespoon sour cream
- Sea salt and black pepper to taste
Here’s what to do:
- Sauté onion for a few minutes until translucent, adding a bit of sugar to help it caramelise.
- Add garlic and sauté until fragrant.
- Add peas and mix well for 1-2 minutes.
- Add vegetable stock, cover and let simmer for about 15 minutes on low heat.
- Let cool and transfer to a blender.
- Add cucumber and a few mint leaves and puree until smooth.
- Add olive oil, lemon juice and 3 tablespoons sour cream and puree again.
- Season with salt and pepper.
- Transfer to fridge and chill.
